“We pick the roses before the sun is high. By afternoon they are already in the copper still.”
Damask roses are picked at dawn in Joshimath, spread out to dry on the terrace, and steam-distilled the same day in copper vessels. Nothing travels far before it's bottled; the mountain air does half the work.
